In 1903, the roots of Lallemand Inc. took hold in Montreal, Canada, where it began its journey as a yeast and fermentation company. Little did the world know that this humble start would eventually lead to groundbreaking contributions to the brewing industry.
Fast forward to 1972, when Lallemand expanded its yeast production capabilities to include brewing yeast, signaling its initial foray into the brewing world. Significant milestones followed, including the acquisition of Red Star in 1986 and a partnership with Weihenstephan in 1998, which led to the introduction of Servomyces—a yeast nutrient enriched with zinc.
In 1999, Lallemand established a dedicated research center for brewing yeast in Montreal. 2001 brought two pivotal acquisitions: the Siebel Institute of Technology and AB Vickers, enhancing its expertise and global presence.
Over the years, Lallemand has continued to play with yeast strains like LalBrew Diamond and LalBrew New England, but it was in 2017 that it truly left a mark with the introduction of WildBrew™ Sour Pitch—a freeze-dried Lactobacillus plantarum that simplified sour beer production.
In 2018, Lallemand broke new ground with Mascoma Sourvisiae®, a bioengineered yeast capable of producing lactic acid during fermentation.
