Over the years, Lallemand has continued to play with yeast strains like LalBrew Diamond and LalBrew New England, but it was in 2017 that it truly left a mark with the introduction of WildBrew™ Sour Pitch—a freeze-dried Lactobacillus plantarum that simplified sour beer production.

In 2018, Lallemand broke new ground with Mascoma Sourvisiae®, a bioengineered yeast capable of producing lactic acid during fermentation.
